For those midnight homemade cookie cravings!
Start by melting your butter in the microwave. Butter should just be melted, not boiling. Add sugars, vanilla and salt. Stir to combine. Separate your egg and add the yolk only to your cup. Stir to combine. Add flour, then stir again. Measure a scant, slightly less than full, 1/2 cup of all-purpose flour. Add the chocolate chips, and give a final stir. Now your mixture will look like cookie dough. Cook in microwave 40-60 seconds, start checking for doneness at 40 seconds. Mine takes 50 seconds. Do not cook past one minute, just like a regular cookie, this will continue cooking as it cools. If the cookie is dry or cake like, try less time.** Serve warm.
A quick and delicious way to make breakfast if your in a rush or want to skip brunch at your dining hall on a Sunday morning to catch some more Z’s.
First you need bread and cube it or cut into little squares. Use whatever you have but I personally prefer Texas Toast when I make my french toast. Get your cup or cups ready. Butter the inside, either rub a pat of butter around, or you can melt the buter in a mircowave and slosh it around. Up to you. Place the bread in the cup of your choosing. I used two small cups this time because my pesky husband wanted in on the action, but one big cup totally works. About a slice or a slice and a half will do it. Smoosh it down a bit but don’t compact it so much cause you need the liquid to be able to work it’s way in.Now in a separate cup or ramekin do the following:
-crack and egg into it
-add 3 tablespoons of milk
If you like your french toast really sweet or vanilla-y, add a single drop of vanilla extract. Mix it all together with a fork. Pour the mixture into your cup/cups. Smoosh it a little, and give it a minute to soak down into the bread. Now stick your cup in the microwave. Start with one minute, then add ten seconds at a time until it’s cooked to your liking (no runny eggs). In my microwave that’s 1 minute, 20 seconds. Add syrup. You have to have syrup. Or whip cream.
Ten times better than Easy Mac.
In a microwave safe mug or bowl (make sure it is a big one or it will boil over), put 1/3 cup elbow macaroni and 1/3 cup + 1/4 cup water.Microwave for 6 minutes, stirring at 4 minutes, 2 minutes, and 1 minute. The pasta should be cooked and there will be a tiny bit of thick pasta water in the bottom. Leave this water. Add a heaping 1/3 cup shredded Cheddar Jack cheese. Return to the microwave for 30 to 45 seconds to melt the cheese. Stir well, adding a small splash of milk (maybe 2 teaspoons).
This recipe will have people asking, “Did you really cook that in your microwave?”

For a classy evening with your roommates. Wine sold separately!
Begin by adding 1/2 tablespoon of butter to each ramekin and adding a spoonful of onions. Microwave for 1 1/2 minutes on high, stirring after 30 seconds to distribute the melted butter. Next, add a pinch of garlic, 1/4 cup rice, and 1/4 + 2 tablespoons broth. Cover with loosely with plastic wrap and heat in the microwave at 50% power level for 2 minutes. Remove and stir. Add additional broth if necessary. Repeat heating process. After heating for a total of 4 minutes, it’s time to add your wine. About 1-2 tablespoons per ramekin should do it. At this point you should also add the bacon, kale, mushrooms. Cover again with plastic wrap and heat for another 2 minutes at 50% then add parmesan.
